  • about 24 pieces of ladyfingers

  1. Mix the hot espresso with 80 g of sugar and set it aside.

  2. Using a bowl on the mixing bowl, weigh out 50 g of sugar and set it aside as well.

  3. Insert the mixing attachment, add the pinch of salt and the egg whites to the mixing bowl and beat the mixture for 3 minutes/speed setting 4 until stiff, adding the previously weighed sugar after about a minute. Then remove the mixer attachment, pour the egg whites and put it in the fridge.

  4. Clean the mixing attachment and put it back into the cleaned mixing bowl. Pour in the cream and beat it on speed 3 until it has the desired consistency. Then put the cream in the cold too.

  5. Powder 50g sugar for 15 seconds/speed setting 10 and push the icing sugar down with the spatula.

  6. Using the mixer attachment, beat the egg yolks, vanilla pulp and lemon juice for 9 mins/70°C/speed 3 until frothy. Meanwhile, soften the gelatine in the cold water provided. Remove the mixing attachment.

  7. Put the gelatine with the amaretto in the mixing bowl and mix without a measuring cup for 2 minutes/speed setting 3, adding the mascarpone spoonful through the opening in the lid. Pour the resulting cream into a bowl and carefully fold in the egg whites and cream alternately.

  8. Dip one half of the ladyfingers briefly into the espresso and line a square dish with it. Spread half of the cream on top and add the remaining half of the soaked ladyfingers on top. Complete the delicious tiramisu from the Thermomix with the remaining cream and then put the dessert in the cold for at least 5 hours. Before serving, dust the Thermomix tiramisu with cocoa powder.
