Sandwich Baguettes à la Subway - Wundermix GmbH

If you're a Subway enthusiast like we are, then you should definitely try this recipe at home!
Not just because homemade always tastes best anyway.
As your own sandwich artist, you can put together your favorite sub to your heart's content and top it with as many toppings as you wish.

Ingredients for 4 baguettes :

  • 300 grams of water
  • 500 grams of flour T550
  • 30 grams of fresh yeast
  • 60 grams of olive oil
  • 3 teaspoons salt
  • 1 egg yolk
  • 1 tablespoon milk
  • 1 tablespoon sesame seeds
  • 1 tablespoon oregano, dried
  • 1 tbsp Parmesan, grated

Preparation :

1. First add water, oil, yeast and salt to the mixing bowl and heat for 2 min. / 37° / speed 1 .

2. Add flour and knead for 4 minutes on the dough setting to form a smooth dough.

3. Empty the mixing bowl onto a floured work surface and knead everything well again by hand.

4. Now divide the dough into 4 equal pieces and shape into 30 cm long snakes by carefully pressing, rolling and pulling.

5. Now place the shaped pieces of dough in a baguette mold (non-stick coated). Thanks to the baguette shape, the dough pieces retain their round shape during the rising time and do not sweat during baking, so that the baguettes also become nice and crispy on the bottom.

6. Brush all visible sides with the mixed egg yolk-milk liquid so that the baguettes get their typical golden brown color when baked.

7. Then sprinkle the baguettes with sesame or oregano and parmesan as desired to create the desired type of bread.

8. Let rise in a warm place for 30 - 60 minutes until the volume has visibly increased.

9. Bake at 180 degrees top and bottom heat for about 25 minutes until the desired browning is achieved.

10. Now top with meat, sausage, cheese, fresh vegetables, sauces and spices as desired. There are no limits to creativity!
