  • 220g water
  • 20g yeast
  • 400g flour
  • 1 tsp salt

For the bruschetta topping:

  • 2 cloves of garlic
  • 1 onion, halved
  • Leaves from 6 stalks of basil plus a little more for garnish
  • 60g olive oil
  • 20 g light balsamic vinegar
  • 0.5 tsp salt
  • 2 pinches of pepper
  • 750 g date tomatoes
  • arugula

  1. Add water, yeast, flour, olive oil and salt and knead dough setting/2 minutes. Cover the mixing bowl and let the dough rise for an hour.
