What's better than good old potato soup? It's quick and easy to prepare, keeps you warm, tastes creamy, can be combined in a variety of ways and is simply delicious!

You can also prepare them in large quantities so you can eat them the next day or freeze them for another day.

INGREDIENTS

  • 2 pieces roots carrots or carrots
  • 3 stalks of celery
  • 3-4 medium potatoes
  • 1 stalk of leek
  • 500 ml water
  • 1 tsp salt
  • 1 small onion
  • 20g margarine
  • 3 spoons of soup base, alternatively 2 teaspoons of broth
  • 50 ml cream
  • 2 tbsp crème fraîche
  • 1 pinch of pepper

INSTRUCTIONS

Wash and peel vegetables. Cut the carrots and celery into pieces, cut the leek into rings and dice the potatoes. Add water and salt to the mixing bowl and hang in the cooking basket filled with the vegetables. Now cook for 15 minutes/Varoma®/level 1-2.

Set the cooking basket aside and collect the liquid. Place onion in mixing bowl and chop 5-6 seconds/speed 8. Add margarine and sweat for 3 minutes/Varoma®/speed 2.

Add the vegetables and 600 ml of cooking liquid (add water if there is not enough). Now add the soup base and cook for 20 minutes/100°C/speed 1.

Finally add the creme fraiche and cream and puree for 30 seconds/speed 6. Then add the vegetables and stir for 2 mins/100°C/speed 2. Finally, puree finely at level 10 until the desired consistency is reached.
