Risotto was for me the first dish in the Thermomix with this AHA effect. Of course, our Thermi makes baking, puréing,... easier for us. Some work. But with risotto, it always strained my nerves. This eternal stirring. There I sang a hymn of praise on my Thermomix for the first time. Since then I really like making risotto. And I trust in different, funny variations and creations. For the summer: apple-lemon risotto.
TM5 - Ingredients for 4 portions
- 250 g risotto rice
- 70 g Parmesan cheese
- 2 apples, sourish
- 5 spring onions
- 850 g vegetable broth, hot
- juice of a lemon
- 20 ml olive oil
- salt, pepper
Mix It

Parmesan shredder → 10 sec. | Level 10
- Cut apples into quarters, remove seeds and put them in pieces into the mixing bowl
- Wash the spring onions, place them in the mixing bowl in pieces and chop them up → 3 sec. | Step 10
- Add 10 g olive oil and sautéé → 3 min. | Stage 1 | Varoma | Counterclockwise
- Decant apple-leek onion mixture
- Add 10 g olive oil to the mixing bowl

Add risotto rice and sauté→ 3 min.often striring step | 100° | Counterclockwise rotation

Add hot vegetable broth and lemon juice → 22 min. soft brewing stage | 100° | Counterclockwise rotation
- Add the apple-leek onion mixture at the end of the cooking time
- Using the spatula, fold in and heat again → 2 min. Soft frying stage | Counterclockwise .
- Add Parmesan cheese and serve immediately
