American pumpkin cake

Who doesn't like pumpkin pie? Fluffy, colorful and pleasantly late summer. Today's # Thermomix® # recipe of the week is easy to prepare and the result is incredibly delicious! This and many other great recipes can be found in the Tanjine book.

INGREDIENTS:

Chevapchichi

  • 200 g pumpkin flesh
  • 4 pcs eggs
  • 200 ml oil
  • 300g sugar
  • ½ tsp salt
  • 2 tsp cinnamon
  • 1 bag of baking powder
  • 300 g flour type 405


Topping:

  • 100 g cream cheese
  • 60 g butter at room temperature
  • 250g powdered sugar
  • 1 pack vanilla sugar
  • 2 tbsp cream
  • Grease for the tray

INSTRUCTIONS:

Process sugar into powdered sugar in the Thermomix® by pulverizing it for 1.5 minutes/speed setting 10. Then refill. Peel the pumpkin, cut it into cubes and briefly chop it in the Thermomix® at level 10. Place all dough ingredients in the mixing bowl and knead for 3 minutes/bread setting. Push the dough down with the spatula and mix again briefly on level 3. Put the dough in a pie tin or springform pan and bake in a preheated oven at 160°C for approx. 60-65 minutes. (In a bottomless baking ring, e.g. with Vemmina or Lumara, 45 - 50 minutes.) Do a stick test. Add all ingredients for the topping to the Thermomix® and mix for 20 seconds/speed 3. As soon as the cake comes out of the oven, spread the topping on the cake. Allow the cake to cool and then store it in the refrigerator. This can also be decorated with icing.
