To prepare this recipe you need Simsafix - the practical multitool for the Thermomix TM6, TM6 and TM31.
The milk-yoghurt mixture must not be moved during fermentation so that the yoghurt can develop its creamy consistency.
Ingredients:
900g milk (at least 3.5% fat)
100g yogurt (not heat treated)
500g water
Note: The quantity can easily be halved depending on your needs.
Preparation in the Thermomix:
1) Add 500g water to the mixing bowl and insert Simsafix.
2) Weigh the milk and yoghurt into Simsafix and stir with a spoon until the yoghurt has completely dissolved.
3) Put on the mixing bowl lid and measuring cup and keep warm for 10 hours / 40 degrees / level 1 (fermentation mode on the TM6, alternatively set 6 x 99 minutes) so that the yoghurt cultures can multiply.
4) Enjoy yogurt or store in the refrigerator and use within a week.
Tip: If you want your yoghurt to last longer, heat the milk (without Simsafix) to 90° between steps 1 and 2, stirring occasionally, and only continue with step 2 once the temperature of the milk has dropped below 40° again.
