Ravioli mit Ricotta-Spinat-Füllung

Homemade ravioli are a highlight in the kitchen - and with the pasta attachment for the WunderCentix this dish is particularly easy to make. In this recipe, we show you how to make delicious ravioli with a ricotta and spinach filling. The combination of fresh pasta and an aromatic sage and walnut sauce makes this dish a real favorite.

Ingredients for 4 people 

For the filling:

  • 250 g spinach
  • 450 g ricotta
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 pinch of nutmeg

For the dough:

For the sauce:

  • 1 small onion
  • 50 g butter
  • 1 sprig of fresh sage
  • 25 g walnuts
  • Grated parmesan (for garnish)

 

And this is how it works  

Prepare the dough:


Prepare the pasta dough basic recipe prepare.
Then roll the dough with the pasta roller of the WunderCentix pasta attachment several times until level 2 is reached.

Divide the dough in half and pass through the roller again.

    Prepare the filling:

    Place the spinach in the mixing bowl.
    Start the food processor: 20 seconds / level 5 Blend

    Add ricotta, salt, pepper and nutmeg
    Start the food processor: 20 seconds / level 3 blend

     

    Shape the ravioli:

    Lay out the rolled out dough.
    Place 1 teaspoon of the ricotta and spinach filling on the top half of the dough at 2 cm intervals.

    Fold the dough over lengthways and cut into squares or semicircles using a pizza roller or ravioli roller.

    Cook the ravioli:

    Mix the ravioli in the mixing bowl with WunderCap at 95 °C for 6 minutes.
    Then carefully remove and mix with a little olive oil.

    Prepare the sauce:

    Place the onion in the mixing bowl. 
    Start the food processor: 10 seconds / Level 5 chop

    Add the butter, sage and walnuts.
    Start the food processor: 8 minutes / 80 °C / level 2.5 Heat until the onions are soft and the butter has melted

    Homemade ravioli can be cooked up to 3 months and remain fresh and tasty. It is important to prepare them individually before freezing to prevent them from sticking together. After pre-freezing, simply pack them airtight.
