Enjoy a delicious nut and seed bread that is gluten-free, vegan, keto and even paleo - all with the Thermomix! Ingredients: 

  • 150 g rolled oats
  • 140 g sunflower seeds, crushed
  • 90 g linseed, crushed
  • 90 g hazelnuts, ground
  • 2 tsp chia seeds, whole
  • 4 tsp psyllium husks, ground
  • 1 tsp salt
  • 300 g water
  • 1.5 tbsp maple syrup
  • 3 tsp coconut oil
  • Loaf tin (approx. 25 cm)
  • Tip: Oats, seeds and nuts can also simply be mixed in advance with the WunderCentix flake crusher can be crushed in advance to develop their full effect.

And this is how it works: 

  • Small loaf pan (approx. 25 cm) with baking paper.
  • Place all the ingredients in the mixing bowl
  • Start the food processor: mix for 15 seconds / reverse / speed 5.
  • Blend the dough, e.g. using the TeigTwister into the loaf tin and smooth out. It is best to leave the dough covered in the fridge overnight (but for at least 4 hours).
  • Preheat the oven to 180°C hot air.
  • Press the dough down again, smooth out and prick several times with a wooden skewer.
  • Bake the bread for 40-50 minutes, removing from the tin after 20 minutes and finishing baking without the tin.
  • Leave the bread to cool completely on a wire rack.

Yes, you can also prepare dough for rolls, ciabatta or baguettes in the Thermomix. The kneading time and the ratio of liquid to flour may vary, but the basic technique remains the same. For ciabatta, you usually need a moister dough and slightly longer resting times.

What do I do if the dough is too sticky or too dry?

If the dough is too sticky, you can add a little more flour until it has an elastic but not sticky consistency. If the dough is too dry, add a tablespoon of water or oil to make it smooth again.
