Thermomix recipe: Pasta in eggplant and tomato sauce with salsiccia balls

Well, what about, who wants pasta? Plus a delicious sauce with eggplant and tomato and, for the meat lovers among us, delicious salsiccia balls. With the balls, we're making it particularly easy for ourselves, but more on that below.


  • 125g Gruyère cheese (alternatively Parmesan)
  • 2 carrots, approx. 180g, peeled and roughly pre-cut
  • 450g salsiccia
  • 1 tbsp fennel seeds
  • 160g onion, cleaned and halved
  • 2 cloves garlic, cleaned
  • 400g eggplant, diced
  • 50ml sunflower oil
  • 400g canned tomatoes (chunked or whole, which are then roughly chopped)
  • 200ml vegetable broth
  • Piment d'Espelette
  • Salt
  • pepper
  • Noodles (quantity of your choice)


1. First add the Parmesan to the mixing bowl and chop for 5 seconds on level 10. Then take it out and set it aside. Then put carrots in the mixing bowl, chop for 5 seconds at level 10 and remove.


2. Squeeze out the Salsiccia sausages and form small balls out of the sausage meat. Now line the flat Varoma with cooking paper (we use our ThermiGar ) and distribute the balls on it.

3. Add the onion halves, fennel seeds and garlic to the mixing bowl and mix on speed 5 for 5 seconds. Add the aubergine and sunflower oil and cook everything together for 4 minutes, counterclockwise on level 1/Varoma without the measuring cup in the lid.


4. Then add carrots, tomatoes and vegetable stock as well as the spices, add Varoma and cook on level 1/Varoma for 25 minutes.


5. Cook the pasta and serve with the balls and sauce.

By the way, Salsiccia is a spicy Italian sausage specialty :-)
