Fancy a quick, tasty and filling dish? These potato rösti with zucchini can be prepared in no time at all and are perfect for anyone who likes things simple and tasty. Ingredients for 2 portions
- 500 g peeled waxy potatoes (e.g. with the Wunderpeeler potato peeler insert for the Thermomix)
- 500 g zucchinis
- 2 eggs
- salt & pepper
- Butter for the pan, alternatively cooking spray
And this is how it works
- Mix the potatoes and zucchinis with the WunderSlicer V2 (fine grater disk) or WunderCentix Vegetable cutter and the grater attachment and collect in a bowl.
- Leave the grated mix to stand for 5 minutes and then place in a clean kitchen towel. Wring out well to remove any excess liquid.
- Place in a bowl, crack in the eggs and season with salt and pepper. Mix everything well.
- Heat the butter in a pan and spoon the zucchini and potato mixture into the pan. Flatten with a spoon. Push the edges slightly towards the center and fry the rösti over a medium heat for a few minutes.
- When the rösti are golden brown, turn once and fry on the other side.
- Serve with herb quark, if desired.
Tip: These rösti can also be baked in the oven if you want to make things even easier!

Where do potato rösti come from?
Potato rösti have their origin in Switzerland and are a real traditional dish there. Originally prepared as a simple farmer's breakfast, they were made from potatoes, salt and fat.
