Gratinated vegetable casserole with the WunderSlicer®, vegan

2 large zucchinis
4-5 carrots
approx. 8 potatoes
1 red pepper
1 orange pepper
1 yellow pepper
4 spring onions
Onions and garlic as desired
1.5 packs of vegan processed cheese
450 ml plant-based milk (soy, pea or similar)
Spices to taste (salt, pepper, oregano, thyme, sweet paprika, garlic)

It's that easy

First wash all the vegetables thoroughly.
Now quarter the zucchinis lengthwise, peel the carrots and quarter the peppers.

Attach the WunderSlicer® to the Thermomix and start anti-clockwise rotation at level 2.5.

  • For the zucchinis we use the coarser slice attachment (2.2 mm)
  • For the peppers we use the coarser slices attachment (2.2 mm)
  • For the potatoes we use the attachment finer slices (1.0 mm)
  • For the carrots we use the coarser grater attachment (2.2 mm)

Grate all the vegetables and then chop the spring onions and garlic.

Put everything into a shallow baking dish. Preheat the oven to 200°C.

Mix plant milk with spices and pour over the mixture.

Mix in half of the vegan cheese spread and place the whole thing in the oven for about 45 minutes. Then sprinkle the remaining cheese over the casserole and place it in the oven for another 10-15 minutes.
