Ingredients:
- approx. 200 g brown rice
- 600 ml water
- a little oil
- cashew nuts
- 300 g diced turkey breast
- 1 red bell bell pepper in strips
- 1 leek in pieces
- 3-4 red peppers, seeded
For the sauce
- Cooking stock
- Ground coriander
- 2 tablespoons soy sauce
- 2 tbsp cornflour
- 2 tbsp peanut cream
- 400 ml stock
Preparation:
Soak the rice in the steamer basket in a bowl of water for 1/2 hour. Pour the water and oil into the mixing bowl and attach the cooking basket. Place the meat, peppers and leek in the cooking pot, sprinkle with 1-2 peppers cut into strips. Cook for 30 minutes / Varoma / level 1. Transfer the rice and meat to a bowl. Collect the cooking juices. Add a little oil and the cashew nuts (approx. 50 g) to the mixing bowl, cook for 3 mins. at 100°C/speed setting 1 and then add to the meat. Drop the rest of the peppers into the blender jug with the blade running at speed 7, add the sauce ingredients and bring to the boil for 6-7 min. at 100°/speed setting 3. Pour the sauce over the meat, vegetables and nuts.
