Serves 4 people
INGREDIENTS
- 500 g white asparagus
- 500 ml chicken broth
- 200 ml sweet cream
- 25g butter
- 15g flour
- Salt
- pepper
- nutmeg
- Chives or chervil
- Cream of asparagus soup country house team
INSTRUCTIONS
Peel the asparagus and cut it into pieces, put it in the cooking basket, add 500 ml chicken stock and cook for 20 minutes/100°C/speed 2 until done.
Puree with a hand blender, add cream and simmer gently for 10 mins/100°C/speed 2. Knead the butter and flour and stir into the soups. There should be an easy bond. Let everything simmer a little again. Season and serve with chives or, even better, fresh chervil.
