This dish reminds me of a vacation in Norway: we entered a fish restaurant somewhere on the coast without any expectations - and were delighted by this sensational, simple salmon dish:
Fish:
- 2 fresh salmon fillets with skin
- 2 tbsp olive oil
- salt, pepper
Herb crust:
- 100g breadcrumbs or stale bread (processed into breadcrumbs)
- 1 clove of garlic
- 100g green olives (preferably the ones with anchovies)
- 6 sprigs of parsley
- 1 tsp rosemary needles
- 1 teaspoon lemon thyme leaves
- 8 tbsp olive oil
- 30g soft butter
- ¼ tsp salt
- ⅛ tsp black pepper from the mill
Preparation:
Preheat the oven to 180 degrees.
Line a baking tray with baking paper.
Salmon:
Rub the fish with oil, season with salt and pepper and place skin side down on the baking tray.
Herb crust:
Chop the olives, garlic and herbs (Thermomix5 sec level 5; Kenwood spice grinder: 3 times P)
Mix the oil, butter, breadcrumbs and herb-olive mixture in a bowl with a wooden spoon and work in with your hands until a coarse paste has formed.
Spread the crust mixture over the salmon fillets and press down a little.
Bake for 20 minutes and serve with foccaccia and salad.
