Rustic white bread in a pot

Rustikales Weißbrot im Topf - Wundermix GmbH


  • 100g water
  • 100g milk
  • 80g white wine
  • 1/2 yeast cube
  • 1 teaspoon honey
  • 500 g spelled flour 630
  • 2 tsp salt
  • 2 tsp baking malt
  • 30 g butter in small pieces

Place water, milk, white wine, yeast cubes and honey in mixing bowl and heat 2 mins/37°C/speed setting 2.
Now add the rest of the ingredients to the mixing bowl and mix everything for 2 minutes/kneading setting.
Place the dough in a bowl and let it rise, covered, until double in size (approx. 30 minutes).
After rising, flour well all over and bake in a hot cast iron pot at 220°CO/U for 60 minutes (with lid).

The dough is wonderfully smooth and does NOT stick.
