Quick potato soup

What could be better than good old potato soup? It's quick and easy to prepare, keeps you warm, tastes creamy, can be combined in a variety of ways and is simply delicious!

It can also be prepared in large quantities so that you can eat it the next day or freeze it for another day.

INGREDIENTS

  • 2 pieces of root carrots or carrots
  • 3 stalks of celery
  • 3-4 medium potatoes
  • 1 leek
  • 500 ml water
  • 1 tsp salt
  • 1 small onion
  • 20 g margarine
  • 3 tablespoons soup base alternatively 2 teaspoons stock
  • 50 ml cream
  • 2 tbsp crème fraiche
  • 1 pinch of pepper

 

INSTRUCTIONS

Wash and peel the vegetables. Cut the carrots and celery into pieces, the leek into rings and dice the potatoes. Pour the water and salt into the mixing bowl and place the basket filled with the vegetables in the bowl. Cook for 15 minutes/ Varoma®/speed setting 1-2.

Set the cooking basket aside and collect the liquid. Put the onion into the mixing bowl and chop for 5-6 seconds/speed setting 8. Add the margarine and sauté for 3 min./Varoma®/speed setting 2.

Add the vegetables and 600 ml of cooking liquid (top up with water if not enough). Now add the soup base and cook for 20 min./100°C/speed setting 1.

Finally, add the crème fraîche and cream and puree for 30 seconds/speed setting 6. Then add the vegetables and stir in for 2 min./100°C/speed setting 2. Finally, puree finely on speed 10 until the desired consistency is achieved.
