Lukewarm asparagus with vinaigrette and scampi tails Halved quantity is great as a small starter!

INGREDIENTS
- 24 medium asparagus spears, white & green
- 1 slice of washed lemon
- 2 thinly sliced spring onions
- 1 clove of garlic finely chopped
- 1 pinch of salt & pepper
- 30 grams butter
- 12 pieces shrimp tails washed & cleaned
INSTRUCTIONS
Since I had this as an appetizer and ate it alone today, I used the quarter amount from the recipe!
5 medium green asparagus spears
1 slice of lemon
I cooked the asparagus in the Varoma® for 10 to 15 minutes.
I added a little salt and the slice of lemon to the water.
The vinaigrette (walnut oil, sherry vinegar, pepper, salt) was quickly stirred ?
Fold the spring onion slices and the finely chopped garlic clove into the vinaigrette and add the finely chopped asparagus.
I sautéed the scampi in a little salted butter with a little garlic and immediately mixed them with the lukewarm asparagus and the vinaigrette.
