Lukewarm asparagus with vinaigrette and scampi tails

Lukewarm asparagus with vinaigrette and scampi tails. Halved quantity works great as a small starter!

Preparation Approx. 30 minutes (peel asparagus, clean scampi, etc.)

  • 24 spears of medium-sized asparagus, white & green
  • 1 slice of lemon washed
  • 2 pieces of spring onions, thinly sliced
  • 1 piece of garlic clove finely chopped
  • 1 pinch of salt & pepper
  • 30 grams of butter
  • 12 pieces of shrimp tails washed & cleaned


Since I had this as a starter and was eating it alone today, I used a quarter quantity from the recipe!

5 medium-sized green asparagus spears

1 slice of lemon

I cooked the asparagus in the Varoma® for 10 to 15 minutes.

I had some salt and the lemon slice in the water.

Vinaigrette (walnut oil, sherry vinegar, pepper, salt) was quickly stirred?

Fold the spring onion slices and the finely chopped garlic clove into the vinaigrette and add the chopped asparagus.

I fried the scampi in a little salted butter with a little garlic and immediately mixed it with the lukewarm asparagus and the vinaigrette.
