Salmon fillets with a Mediterranean herb crust

This dish reminds me of a vacation in Norway: completely without expectations, we entered a fish restaurant somewhere on the coast - and were amazed by this sensational, simple salmon dish:

Fish:

  • 2 fresh salmon fillets with skin
  • 2 tbsp olive oil
  • Salt pepper

Herb crust:

  • 100g breadcrumbs or stale bread (processed into breadcrumbs)
  • 1 clove of garlic
  • 100g green olives (preferably the ones with anchovies)
  • 6 sprigs of parsley
  • 1 tsp rosemary needles
  • 1 teaspoon lemon thyme leaves
  • 8 tbsp olive oil
  • 30g soft butter
  • ¼ tsp salt
  • ⅛ teaspoon ground black pepper

Preparation :
Pre heat the oven to 180 degrees celcius.
Line the baking tray with baking paper.

Salmon:
Rub fish with oil, salt and pepper and place skin side down on the baking tray.

Herb crust:
Chop the olives, garlic and the herbs (Thermomix: 5 seconds level 5; Kenwood spice mill: 3 times P)

Mix the oil, butter, breadcrumbs and herb-olive mixture in a bowl with a wooden spoon and work with your hands until a coarse paste is formed.

Pour the crust mixture onto the salmon fillets and press down slightly.

Bake for 20 minutes and serve with foccaccia and salad.
