INGREDIENTS
pasta dough
- 300 g flour
- 2 eggs, room temperature
- 50 ml warm water
- 1/2 tsp salt
Filling
- 100 g lean bacon
- 100 g ham sausage
- 1 Landjäger
- 2 tbsp butter or clarified butter
- 300 g sauerkraut
- 1 tsp caraway seeds
- 1 pinch of salt
- Pepper, to taste
Sauce
- 1 1/2 liters vegetable stock, hot
INSTRUCTIONS
Put all the ingredients for the dough into the mixing bowl and process for 15-20 seconds/speed setting 7 to form a smooth dough.Put the dough into a bowl and cover. Rinse the mixing bowl, chop the bacon, ham sausage and Landjäger for 5 seconds/speed setting 6, fry for 4 minutes/90 °C/speed setting 2. Add the sauerkraut and spices and fry for 7 minutes/90 °C/speed setting 2, decant and leave to cool slightly. Roll out the dough very thinly on a floured surface into a long rectangle.
Spread the filling over the rectangle, leaving a narrow edge free.
Roll up the dough from the long side and cut slices approx. 4-5 cm thick from the roll.
Place the slices, cut side down, close together in a heatproof pan or baking dish.
Pour the hot vegetable stock over the fritters. They should be just covered by the stock. Bring to the boil briefly, then place in the preheated oven. Baking temperature: 200 °C, baking time: approx. 45 minutes
