  • 2 kg of jacket potatoes, peeled and cooked
  • 2 vegetable onions
  • 500 ml water
  • 1 piece of Chinese garlic Solo called the solitary garlic
  • 125 ml rapeseed oil
  • 2 tbsp mustard
  • Vinegar
  • pepper
  • 1 tbsp meat bouillon powder
  • 1 tbsp vegetable stock powder
  • 1 tbsp salt
  • 1 tsp potato flour
  • chives


  • 500 ml quince jelly
  • 500 ml pear juice
  • 500 ml white balsamic vinegar
  • 500 ml white wine vinegar

Cut the potatoes into thin slices and place in a large bowl. Add mustard, pepper and vinegar as needed. Quarter the vegetable onions, put them in the mixing bowl with the garlic and chop for approx. 10 seconds/speed 4, pour in the oil and steam for another 3 minutes/Varoma®/speed 1. Pour over the potatoes and stir gently. Pour water into the mixing bowl, add salt, vegetable stock powder, meat stock powder and potato flour and bring to the boil for 7 mins/speed 1. Pour the broth over the potato slices and stir. If necessary, season the potato salad again and let it steep; it is very tasty warm and cold. Leave the warm potato salad covered with a cloth. Garnish with chives before serving.


Add the quince jelly and pear juice to the mixing bowl and mix for 10 seconds/speed 3, then bring to the boil for approx. 4 minutes/90°C/speed 2. Then add both types of vinegar and mix for 10 seconds/speed 3 and fill into bottles.
