Got a great loaf of bread for you today!
Delicious from the wood-fired oven. Especially now at barbecue time and always delicious and fresh like from the wood-fired oven!

Potato bread with yoghurt in a wooden baking frame

Ingredients:

  • 300 ml hot water
  • 200 g potato, raw, peeled 
  • 150 g natural Greek yogurt
  • 1 bag of dried yeast 
  • 1 tbsp honey or sugar
  • 400 g spelt flour type 812
  • 400 g spelt flour type 630
  • 1 tbsp salt
  • 1/2 tsp mustard flour 
  • 40 g grape seed oil
  • Extra ingredients:
  • Clarified butter for greasing the baking frame
  • 2 - 4 tbsp sesame seeds for sprinkling


Preparation:
Grease the wooden baking frame well, sprinkle with sesame seeds if necessary, then place on an oven rack lined with baking foil.
The amount of dough is approx. 1500 g, makes 4 bread blocks of 375 g each.
Put the water and potato pieces into the blender jug and chop for 20 seconds/speed setting 8,
then put the remaining ingredients into the mixing bowl one after the other, knead for 3 min/speed setting.
Open the lid and pour in the oil around the edge and mix again.
1 min/bread setting.
Transfer the dough to an oiled bowl and leave to rise in a warm place for 2 hours, kneading in the dough with a dough scraper after 1 hour.
Once risen, divide the dough into 4 pieces and shape into 4 round balls on the work surface, place each into a small box and press evenly into the tin, moisten with a little water and sprinkle with sesame seeds.
Leave the dough to rest for another 20 minutes, then bake at 185°C for approx. 90 minutes.
