Today's #recipe of the week is a juicy #sheet cake with raisins, almonds, currants & icing. Baked quickly, with a subtle note of cinnamon and cardamom – perfect with coffee but also peppermint tea!

INGREDIENTS

Dough

  • 250g sugar
  • 5 eggs
  • 250 g flour
  • 150 g sultanas
  • 150 g currants
  • 150 g almond flakes
  • Juice from ½ piece of untreated lemon
  • ½ tsp cinnamon
  • 1 pinch of cardamom

molding

  • 250g powdered sugar
  • 3 tbsp orange juice
  • 1 tbsp rum

INSTRUCTIONS

Place the eggs with the sugar in the mixing bowl and mix 3 min/speed 5 until frothy. Add the remaining ingredients and mix again for 1 minute/speed 3. Grease a baking tray well and spread the dough evenly on it. Bake the sheet cake in a preheated oven at 150°C - 175°C (gas: level 1 - 2) for approx. 45 minutes. Meanwhile, mix the sugar with orange juice and rum. Take the finished baking sheet cake out of the oven and cut it into small diamonds or strips while it is still hot. Spread with the icing and let cool.
