Cream of asparagus soup (pureed)

 Cooking time 30 minutes

 Serves 4 people

 

INGREDIENTS

  • 500 g white asparagus
  • 500 ml chicken stock
  • 200 ml sweet cream
  • 25 g butter
  • 15 g flour
  • salt
  • pepper
  • nutmeg
  • Chives or chervil
  • Asparagus cream soup country house team

 

INSTRUCTIONS

Peel the asparagus and cut into pieces, place in the steamer basket, add 500 ml chicken stock and cook for 20 min./100°C/speed setting 2.

Puree with a hand blender, add the cream and simmer gently for 10 min./100°C/speed setting 2. Knead the butter and flour together and stir into the soup. The mixture should thicken slightly. Allow everything to simmer again. Season and serve with chives or, even better, fresh chervil.
