Serves 1 tray

INGREDIENTS

  • 300g sugar
  • 400g almonds
  • 400g flour
  • 400 g margarine or butter
  • 1 glass of blackcurrant jam approx. 450g
  • 3 eggs
  • 2 packs of vanilla sugar
  • 4 tsp cinnamon
  • 1 class tsp clove powder
  • some grated lemon peel
  • 2 tbsp cocoa
  • 2 tbsp rum or rum flavoring
  • 1 pack of baking powder

INSTRUCTIONS

Process sugar 1 min./speed turbo into powdered sugar and transfer. Also chop and transfer the almonds for 30 seconds/speed Turbo. Now heat the margerine or butter for 1.5 minutes/37°C/level 2. Add sugar and mix for 2 mins/speed 3-4 until frothy. Gradually pour in eggs through the opening in the lid. Stir in cinnamon, clove powder, lemon peel, cocoa and rum at speed 2-3. Pour in the nuts and stir for 20 seconds/LL/speed 3 and finally add the flour and baking powder - speed 3-4 (spatula). Spread 2/3 of the dough evenly on a baking sheet and pour the rest into your fuel bag. Mix the jam with a good dash of rum for 1 minute/37°C/speed 2 and spread warm onto the dough. Now use the piping bag to apply a grid and bake in the middle rack of the oven for 30-35 minutes/180°C (U/O).
