Absorbent cotton cake

This recipe owes its name to its wonderfully fluffy consistency. You could certainly also call it cloud cake if you imagine that they are just as fluffy. We from the #country house team think the absorbent cotton cake is heavenly delicious!

Preparation 10-15 minutes

Cooking time 40-50 minutes

 

INGREDIENTS:

  • 6 egg whites
  • 60 g margarine
  • 120 g sugar
  • 140 g milk
  • 250 g flour type 405
  • 1 sachet baking powder
  • ½ lemon zest

 

APPLICATION:

Insert the mixer attachment! Place the egg whites in the mixing bowl, 2 min./speed setting 4 and decant. Remove the mixer attachment!

Put the margarine and sugar into the mixing bowl and mix for at least 1 min./speed setting 3 stir until creamy.
Add the milk, flour, baking powder and lemon zest and mix well. 20 seconds/speed setting 4 mix. Now add the stiff beaten egg whites and mix again. 20 seconds/speed setting 4 stir in.

Pour the batter into a greased loaf tin and bake for approx. 40-50 mins. at 180°C top/bottom heat.
