Spelt bread with the Thermomix

Dinkelbrot mit dem Thermomix

Prepare a delicious spelt bread in the Thermomix in the Thermomix. With the WunderCentix you can even do this in combination with the grain mill attachment to grind the required spelt flour yourself! 

This bread recipe is perfect for a hearty snack or as a snack between meals. Refine the spelt bread with a little honey or a pinch of salt for a special touch. 

Ingredients:

  • 500 g spelt flour 
  • 350 g water
  • 20 g fresh yeast
  • 1 tsp salt
  • 1 tsp honey
  • 1 tsp bread spice to taste
  • Tip: Use homemade flour from the WunderCentix grain mill. Simply finely grind 500 g of spelt grain. 

And this is how it works 

  • Weigh the water into the mixing bowl. 
  • Start the food processor: Heat for 3 minutes / 37°C / speed 1. 
  • Crumble the yeast and place in the blender jug with the honey.
  • Start the food processor: Mix for 20 seconds/speed setting 3.
  • Place the spelt flour, salt and oil in the mixing bowl.
  • Start the food processor: Knead for 5 minutes / dough mode.
  • Place the dough in a proofing basket, cover and leave to rise in a warm place for at least 30 minutes. The volume should double and the surface should show pores.
  • Preheat the oven to 220°C top/bottom heat. Fold the dough 10 more times and shape into a loaf. Cover again and leave to rise until the loaf has risen. Cut the top of the loaf with a knife.
  • Place the bread in the middle of the oven and place a tray of hot water at the bottom and reduce the temperature to 180°C after 10 minutes of baking.
  • Bake the bread for a further 30-40 minutes.

How does fresh bread keep longer? 




 

We recommend that you store the bread after baking cool on a rack so that it cools down and is not so moist.

Store the bread in a sealed bread box or in a kitchen towel. This will keep it for 2-3 days fresh.

You can also use the bread freeze it in freezer bags and defrost as required.
