INGREDIENTS
- 150 g raisins
- ½ measuring cup of rum (approx. 50ml)
- 500 g peeled clementines
- 250 g gelling sugar 2:1
- 1 piece of ginger the size of a fingernail
- ½ measuring cup lemon juice
INSTRUCTIONS
Allow the raisins to infuse with the rum for approx. 1 hour, preferably overnight. Put the clementines and gelling sugar into the blender jug with the ginger and chop for approx. 4 seconds/speed setting 7. Now add the lemon juice and raisins. Bring everything to the boil for 10 mins./100°C/speed setting 1-2. Pour into hot rinsed twist-off jars and turn upside down for approx. 2 mins.
